‘Pav Bhaji’, popular Indian street food can be enjoyed at home

It's a spicy mashed vegetable recipe (a simple and easy one-pot meal to make) served with soft buttery pan-toasted bread. Pav bhaji is a famous Mumbai dish that is popular throughout India. Originally a simple lunch alternative for textile mill employees, the dish grew in popularity and now is eaten as street food and in restaurants across the country. It's always eaten hot, topped with a dollop of butter, diced red onions, coriander, and a squeeze of lemon juice. I pray this recipe gives you as much pleasure as it does to me. Have fun!

Ingredients required:

· 2 tbsp oil

· 200g white onion, sliced

· 25g garlic, finely chopped

· 25g ginger, finely chopped

· 250g tinned tomatoes or raw tomatoes

· 800g potatoes, pre-boiled and diced

· 70g broccoli, cut into small florets

· 150g cauliflower, also cut into small florets

· 1 bell pepper, sliced

· 100g peas

· 20g coriander leaves, finely chopped

400ml water to cook.

Spices:

· 2 tsp of pav bhaji masala and 2 tsp garam masala

· ½ tsp cumin powder

· ½ tsp coriander powder

· ¼ tsp chili powder and turmeric

· 80g butter

· 1 tsp salt

· ½ tsp caster sugar

For Garnishing:

· Coriander, chopped

· Red onion, diced

· A dollop of butter

· A squeeze of lime/lemon juice

To Serve:

Toasted bread rolls or toasted bread with butter.

Method:

1. Heat the oil, white onion, ginger, garlic, and spices in a saucepan over medium heat for 12-15 minutes, or until the onions become translucent.

2. Cook for another 10 minutes after adding the butter and tomatoes.

3. Lower the heat and add the potatoes, mashing them into the tomato spice mixture.

4. Combine the water, vegetables, salt, and sugar in a mixing bowl. Cook for about 15 minutes, stirring occasionally, to prevent the mixture from sticking to the bottom of the saucepan.

5. Finish with the peas and coriander.

6. Garnish with ideal toasted bread-roll and eat.
